Imagine yourself in the role of a Nutrition Counselor and Josephine in your client. Josephine is a 20-year-old female who is present for an eating disorder not otherwise specified. She currently teaches salsa lessons at the community college and is in her last semester of college. She reports she is living at home and the food her mom prepares is not the healthiest because her mom is from Honduras and her father is from Guatemala, so the food is prepared differently. She indicates she has been thin all her life, although she has struggled to maintain her weight since puberty. Since she is a dance instructor, she has to remain fit. She reports she feels very guilty if she has consumed fried foods during the day, but since that is the way her mom primarily cooks, she feels awful to tell her mom to stop cooking that way. She reports if she does consume too much fried foods or junk food, she will run at least 2-3 miles that day or else force herself to vomit, but all the food does not come out. She reports sometimes if she has a later class, she will not eat dinner or only eat 1 meal per day. She has tried counting calories, but then she gets so mad at herself for having more than 1200 calories it causes her to exercise more, which then leads her to feeling exhausted. She indicates she is on no medication, but does take a multivitamin when she remembers. She indicates she has gone from 110 pounds to 125 pounds over 5 years and wants to be back down to 110 or even less. She also had gone to the doctor and he was quite concerned with her lab values. She has provided you a 24 hour meal record:
Breakfast:
1-6 corn tortilla
0.5 cup fried beans cooked with peppers, onions and oil
0.5 cup rice
1 cup no sugar added orange juice
Lunch:
1 slice of whole wheat bread
2 slices turkey
1 small apple
Dinner:
2- 6 tortillas
Beef with onions, peppers cooked in oil
Tomato, onion, pepper salad (made with oil and lime juice)
2 cups of rice
Height: 52 Weight: 117 pounds (based on your scale in the office)
Labs:
Test Result Reference Units
Albumin (visceral protein stores) 3.3 g/dL 3.5-4.8 g/dL
Sodium 133 mEq/L 136-145 mEq/L
Potassium 3.8 mEq/L 3.5-5.2 mEq/L
Iron 0.4 mg/dL 0.6-1.1 mg/dL

Questions for Unit 9:
Documentation needs to be completed at each nutrition counseling session. What information needs to be documented and kept in Josephines medical record?
Can we provide Josephines health and nutrition information to another health professional? Why or Why not?
In order for Josephine to continue to follow up, how do we address payment and reimbursement?
What motivational techniques would you use to motivate Josephine to continue making progress?
It is important to ensure Josephine is progressing through each counseling session. Answer the following questions regarding Josephines progress:
How often would you schedule follow-up sessions with Josephine?
What type of information would you like to collect at the follow-up appointments?
How would you assess her previously set goals?
Identify any obstacles which could impede her success at achieving these goals. How would you help her get beyond these obstacles?

Identify three outside sources that address the chosen concept and evaluate these sources based on biases, strengths, and weaknesses.

Topic: Korean media entertainment development
Description: For this assignment, you will take a concept/topic for this course and redesign the way it is taught. The redesign is intended to teach the concept/topic in the most effective way possible to new first-year students. You will (1) choose a concept/topic; (2) identify and evaluate three outside sources addressing the concept/topic; (3) determine a new way to teach the concept to a specific audience based on those sources; and (4) write an explanatory essay on how and why you selected concept/topic for this assignment.
STEP 1. The topic that I choose is Korean Media entertainment development. The purpose of this assignment is to take what you have learned in this course, supplement what you have learned with three outside sources, and explain the concept to an audience of new first-year students who have little or no understanding of concept that you choose (though they may be familiar with the term).
STEP 2. Identify three outside sources that address the chosen concept and evaluate these sources based on biases, strengths, and weaknesses. Consider the following:
1. Search strategy: What process are you using to identify diverse sources and why? These might include: Google, Wikipedia, social media, library resources, newspapers and magazines, electronic databases (like ProQuest), blogs, etc.
2. Credibility: Where did the source come from and who wrote it?
3. Relevance: Is the information in the source recent or timely?
4. Objectivity: What kind of methods, evidence, or arguments did they provide?
STEP 3. Determine how you would use those sources to redesign the concept to new first-year students. Examples might include making a poster, building a website, creating a YouTube video, giving a speech, etc.
STEP 4. Submit an essay (5-8 pages) that addresses the following:
1. Concept/Topic: Explain your concept/topic for the project.
2. Source quality & Evaluation: Describe the type of sources you chose (articles, books,
videos, websites, etc.) and the overall quality of this collection. And evaluate each
source in terms of credibility, relevance, and objectivity.
3. Concept/Topic redesign: Based on the sources (and what you’ve learned in the course),
explain how you would teach the concept that you choose to new first-year students
4. Bibliography: The essay should include the bibliographic citations for the sources you
use for this assignment, formatted according to MLA, APA, or Chicago style.

The Programs in Language, Culture and Professional Advancement is celebrating its 10th anniversary in 2016.

The Programs in Language, Culture and Professional Advancement is celebrating its 10th anniversary in 2016. For 10 years, the department has dedicated itself to instructing and guiding international students on their academic and professional paths by developing their professional and academic English skills and fluency.

The PLCPA is requesting proposals that tell them how they should celebrate their 10th Anniversary. They are looking for creative and thoughtful ideas that both celebrate and effectively represent their program and its achievements, as well as ideas that are practical and stay within their budget constraints. They would also like to publicize the celebration that they will be having to all current students (approximately 328 students) and former PLCPA students (approximately 2635 students).

The celebration can be an event, commemorative item, charity work, or anything that fits the stipulation of the program above. It should also highlight the PLCPA slogan of Make Your Positive Mark on the World.

You may choose to read the articles below to get further insights about the PLCPA program:

As well as go to the PLCPA webpage for some background information about the PLCPA program.

The PLCPA, like many other university departments, is bound by a very strict budget. The budget for their Anniversary celebration is only $1,500.00. The PLCPA would like for students proposals to suggest potential sponsorships (local or on-campus) or co-hosts (departments on campus) to share some of the financial cost.

The University will make space on campus available for an event, and can provide only tables and chairs. If students choose to use a space on campus, students must indicate which space and why.
